What is the difference between black and white and grayscale?

In everyday use they mean the same thing: a grayscale image maps every colour to a shade of grey between black and white. True 1-bit 'black and white' (only pure black or pure white) is different, but this tool produces the grayscale look most people want.

Can I keep a little colour instead of full grayscale?

Yes. Set the Intensity slider below 100% to partially desaturate the image, keeping a hint of the original colour for a vintage or muted effect.

Does converting to black and white reduce quality?
