About the MIDI Format
MIDI is not audio. A MIDI file contains no recorded sound at all. It holds instructions: which note starts, on which instrument, how hard, and when it stops. The sound you hear comes from whatever synthesiser renders those instructions, which is why the same MIDI file can be unrecognisable between two devices.
This makes MIDI remarkably compact, a full arrangement fits in a few kilobytes, and endlessly editable, since you can change the tempo, key or instrumentation without touching any audio. It also means converting MIDI to MP3 or WAV is a rendering step, not a format change: the converter chooses a sound bank and performs the piece. Expect the result to sound like a general-purpose synthesiser rather than live instruments, and keep the MIDI file, since the audio cannot be edited back into notes.
