AI to JPG: flattened onto a background
Two irreversible things happen. The vector paths are rasterised to a fixed pixel grid, and the transparency almost every Illustrator file carries is composited against a solid background, because JPG has no alpha channel. Flat vector artwork is also the worst case for JPG compression: hard edges between flat colours are exactly what produces visible ringing.
Convert when the destination only accepts JPG. For logos and flat artwork, PNG is the better raster target, it keeps the transparency and will not fringe the edges.

Why did my transparent background turn white?
JPG has no alpha channel, so anything transparent is filled, white by default. For a logo that needs to sit on a coloured background, convert to PNG or SVG instead.
Should I use JPG for a logo?
Usually not. JPG compression is tuned for photographs and leaves visible artefacts around the hard edges and flat colour that logos are made of. PNG keeps the edges clean, and SVG keeps the artwork as vectors that stay sharp at any size.
